Bringing a packed lunch to work is a great way to save cash- so you can spend it on a delicious dinner later! Packing lunch at home also helps you stay healthy and energized. Chipotle Pork and Avocado Wraps:
The trick to these wraps is using up last night’s leftover pork! Try their suggested recipe, or swap it out for your favourite roast pork. Fill up your tupperware with a serving of leftover meat, some avocado, and your favourite crisp veggies like arugula or tomato! Bring a wrap or two on the side to help keep them from getting mushy during the morning. Voila! You have a crisp, flavourful meal that you can even eat one handed. Do you love breakfast for dinner? We sure do! Why not try breakfast for lunch? These green pancakes taste just like the real deal, but are packed with spinach for a guilt-free, vitamin rich meal. Pack a few pancakes with some nut butter and fruit for the perfect mid-day meal. The best part? You can make a huge batch ahead of time and freeze them, so there’s no morning of preparation involved. Broccoli Pesto Pasta Salad:
Sneak some greens into your diet with a broccoli-based pesto sauce! What’s great about this sauce is that it has 2 full cups of broccoli, and is so versatile. Pack up a simple lunch with your favourite pasta, or experiment with pesto flatbreads, sandwiches, or zucchini noodles (zoodles?). One of our favourite noodle substitutes is spaghetti squash. It’s easy, healthy, and- we swear!- super delicious. Add in some good protein like chicken or eggs and this lunch is good to go.
Creamy Vegetable Soup:
No recipe required! No, seriously. Make an easy, delicious soup out of your favourite vegetables using these simple guidelines. Onions, leeks, cauliflower, broccoli, zucchini, carrot, butternut squash- the world is your oyster. (Oyster mushrooms?) Not only do these guidelines make for a super simple and tasty soup, but bringing this lunch to work could hardly be easier. Freeze your leftovers in individual, microwave-safe containers, then simply grab one on your way out the door. Stay warm through the winter with this great meal.
Beef and Pineapple Tacos:
You can taco-ify just about anything! These beef and pineapple tacos may require some assembly at work, but the payoff is so worth it. We suggest adding some spinach or other leafy greens to up your vitamin intake. Not a fan of beef? No problem! Try pork instead, or simply switch this recipe out for your favourite tacos and bring the unassembled meats and veggies in a container with a few soft taco shells on the side. Who doesn’t love a soft taco for lunch?
